Mashed Potato Stuffed Swedish Meatballs

If you haven’t made Swedish Meatballs before, you should tonight. I make them all the time, and I wanted to share them with my food-loving friends at our pot luck dinner. I recently bought one of those little stuffed meatball gadgets┬áthat I wanted to use, so I decided to stuff the meatballs with it’s usual side dish – mashed potato!

These were awesome, and I genuinely think I’d prefer to eat them this way all the time, rather than with the mashed potato on the side. I didn’t end up using my gadget, but these were super simple to make. When I made the mashed potato, I used butter and cream in it but no milk so it wasn’t too sloppy. I used a small cookie scoop (about the size of a melon baller or so) to make even sized balls of mashed potato and put these on a tray in the fridge. I made the meatball mix and formed it around the cooled balls of potato, making sure it was fully sealed. I didn’t have any bust open!
