The real recipe for honey joys/crisps/jumbles

If you’ve been using the recipe off the side of the Cornflakes box, then stop. This is what I consider the ‘real’ recipe for Honey Crisps (Joys, Jumbles), as it appeared in my brothers primary school cookbook more than 20 years ago. The Cornflakes ‘official’ recipe reverses the amounts of sugar and honey, and I find that just leaves you with an overly sugary mess that doesn’t really have a true honey flavour (they’re not called Sugar Crisps after all).

Makes approx 24 small crisps

  • 60g butter
  • 1/4 cup honey
  • 1 tablespoon caster sugar
  • 4 cups cornflakes

Preheat your oven to 180 degrees celcius. Place butter, sugar and honey into a small saucepan and stir over medium heat until butter is melted. (You can also do this in a microwave) Place cornflakes into a large mixing bowl and pour the butter and honey mixture over. Mix until cornflakes are well coated. Place into patty cases, and bake for 8 minutes. Remove from oven and stand for 15 minutes to firm.
