Yasai Katsu Curry – Amazing!

Meatless May suddenly just got better! I have previously expressed my love of Chicken Katsu Curry, and I always get a craving for it in Meatless May for some reason. Previously I have just had the normal curry sauce over rice, and added chunks of zucchini to add another vegetable, but I have just read about Wagamama’s new vegetarian version of this dish – Yasai Katsu Curry. It is 4 thick slices of crumbed vegetable (pumpkin, sweet potato, zucchini and eggplant) served over rice and topped with the curry sauce. Why on earth didn’t I think of that?! There are only 5 Meatless May dinners left but this will DEFINITELY be on the menu. I also heard kohlrabi is excellent crumbed, so after the markets next week I might try Kohlrabi Katsu Curry! :)
